BEEF, CHICKEN, DUCK, TURKEY, AND LAMB

BEEF and LAMB: Our cows and sheep are 100% grass-fed, eating pasture and hay, not grain. Grass is the diet nature intended for ruminants, and the one on which they do best.

Our animals are Rotationally Grazed from early April until late December. In Rotational Grazing, groups of animals are placed on small areas of pasture for a short period of time (commonly 3 days or less), after which they are moved to fresh pasture. This mimics the natural system in which ruminants graze, spreads manure out over a large area rather than concentrating it, and allows the pasture to rest and regrow. In addition, multiple species can graze together, and since each species has different grazing preferences, both pasture utilization and health increase. In the winter, they eat a rich grass and legumehay, purchased from a local farm.

When the animals are mature, they are transported in small groups to a local, family-owned and operated USDA inspected abattoir, where they are processed according to the customer's specifications. Individual retail cuts (steaks, roasts, ground meat, sausage, and more) are also availble at the Farmers Markets at which we sell.

Retail Cuts: We will have our grass-fed beef available for sale at Cold Spring and Woodstock Farmer’s Markets or at the farm by appointment. Animals will be sent out for processing on April 30, July 16, and October 8 and will be available for pick-up roughly one month later.

Bulk quantities : Beef will be available by the side or split-quarter in November. Stock up for the winter and save! Bulk price is $3.75/pound, based on hanging weight. (FarmDollars cannot be used for Bulk purchases of beef since they are already discounted). *Our beef is 100% Grass-Fed, but NOT organic: they are fed non-organic hay in the winter.

CHICKEN, DUCK, AND TURKEY

Our Poultry is also raised outside, but provided with Certified Organic Grain from Lightning Tree Farm in Millbrook, NY.

Chicken: Chickens will be processed on June 8 and Sept. 28. Call to reserve fresh birds. Otherwise all birds will be frozen. Available at Farmers Markets.

Chicken Price: Whole birds $4.50/lb

Turkey : Yes, once again we will be raising turkeys for Thanksgiving, but just a few, so if you are interested, you must order early. Birds need to be reserved with a $15 deposit. They will be available at the farm on Tuesday, Nov. 24.

Turkey Price: $7.00/lb

Duck: Ducks are new for us. Someone mentioned that they are great to have under apple trees. I’ll try anything once. I don’t know yet what they will cost to raise, so I don’t yet know what the price will be. Duck will be ready after June 29.
